Cajun-Style Sweet Potatoes

Here’s another metabolism boosting recipe from Karin Losier and Dave Ruel (Metabolic Cooking). These Cajun-Style Sweet Potatoes make a delicious side dish.

Sweet potatoes are a great source of carbohydrates. The herbs and spices used in this recipe give it what Karin and Dave call a metabolic thermo-charge, revving up your metabolism so your body will burn fat faster.

Cajun-Style Sweet Potatoes ingredients:

    • 2 medium (5oz) sweet potatoes
  • 1 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon thyme
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper
  • 1 teaspoon olive oil

Preheat oven to 375oF.

In a small bowl, stir together paprika, onion
powder, thyme, rosemary, garlic powder, and cayenne pepper.

Slice the sweet potatoes in half lengthwise and brush each half with olive oil. This helps the spices stick to the potatoes when you put them on.

Sprinkle the seasoning mix over the cut surface of each half. Then use the brush you used for the olive oil to rub the spices in.

Place sweet potatoes on a baking sheet or in a shallow pan.

Bake until tender (about 30 to 45 minutes).
